Courgettes have a mild, fresh and slightly sweet flavour, making them very versatile in cooking. Unlike some other vegetables, they do not have a particularly strong taste, so they easily absorb the flavours of herbs, spices, sauces and other ingredients. Their texture is firm and crisp when raw, but becomes tender and juicy when cooked.
They can be eaten raw or cooked and are
commonly grilled, roasted, fried, steamed, baked or sautéed. They can be sliced into salads, added to soups and stews, grated into fritters, or used in pasta dishes and vegetable bakes. Courgettes can also be spiralised into thin strands as an alternative to noodles. The flowers of the courgette plant are edible too and are sometimes stuffed and fried.
